Notes: Research suggests that Karhu ran a series themed on Kyoto’s Unagi (Eel) restaurants. (Related: Warajiya). In this piece, Karhu captures the Nishijin Edogawa 西陣 江戸川 restaurant - a lovely 150 year old machiya specializing in Unagi prepared in typical Tokyo style, all from ingredients local to Nara. Named after the Edogawa river of course!
